Instructions

  1. If your air fryer requires pre-heating, pre-heat it to 350 degrees.
  2. In a small bowl, combine the chicken, black beans and pepper and onion mix.
  3. Place the tortilla flat in the basket of the air fryer. Sprinkle half of the cheese over half of the tortilla.
  4. Add the chicken mixture on top of the cheese. Cover the chicken mixture with the remaining cheese and fold the tortilla in half.
  5. If your air fryer has a rack, place the rack over the quesadilla to keep it in place. Otherwise, you can use toothpicks and a metal utensil (just be sure to use tongs when removing the utensil as it will be very hot!)
  6. Set the air fryer for 350 degrees and cook for 8-10 minutes or until crispy. Carefully remove the quesadilla using a large spatula (and any rack/utensils using tongs).
  7. While the quesadilla is cooking, combine Greek yogurt, lime juice, cilantro and green onions.
  8. Cut the quesadilla into quarters and enjoy with Greek yogurt dipping sauce!
