Instructions

  1. Heat the oven to 200 degrees and line a baking tray with non-stick paper.
  2. Mix chunky peanut butter with finely grated garlic clove, curry powder, a few shakes of soy sauce and lime juice in a bowl. Some nut butters are thicker than others, so add a dash of boiling water to get a coating consistency if necessary.
  3. Add skinless chicken breast fillets, cut into strips and mix. Arrange on the baking sheet, spaced apart, and bake in the oven for 8-10 minutes until cooked, but still juicy and tender.
  4. Eat warm with cucubmer cut into fingers, and sweet chilli sauce.
