Green Chili Chicken Skillet Enchiladas

Ingredients

• Chicken Breast Tenderloins (24 oz)
• Onions (1 medium (2-1/2" dia))
• Red Peppers (1 medium (approx 2-3/4" long, 2-1/2 dia.))
• Black Beans (13 oz)
• Taco Seasoning (3 tsp)
• Olive oil (1 tablespoon)
• Green Chiles (4 oz)
• Mexican Cheese Blend (0.5 cup shredded)
• Nonfat Plain Greek Yogurt (4 oz)
• Carb Counter, Low Carb Tortillas (4 tortilla)
• Green Enchilada Sauce (10 oz)

Instructions

1. Preheat oven to 400 degrees.
2. Heat a large cast-iron skillet over medium-high heat.
3. Add 1 tbsp olive oil and spread around to coat the skillet.
4. Add onion, bell pepper, and ½ of the taco seasoning to the skillet. Cook for about 5 mins, until vegetables are tender.
5. In a large bowl, add chicken and remaining taco seasoning. Mix well.
6. Add enchilada sauce, black beans, greek yogurt, green chiles, and tortilla strips to the bowl of chicken. Stir well.
7. Remove skillet from heat. Add pepper and onions to the bowl with the chicken mixture. Stir.
8. Pour the mixture back into the cast-iron skillet.
9. Sprinkle the top with shredded cheese.
10. Bake at 400 for about 15 mins.
11. Top with extras like jalapenos, cilantro, & avocados.
