Instructions

  1. Whisk together the chickpea flour and vegetable broth in a bowl.
  2. Heat oil in non-stick pan over medium heat. Add onions, zucchini and seasonings and cook for 5 minutes or until brown.
  3. Pour chickpea-broth mixture into pan over vegetables and stir. Continuously stir mixture as it is cooking, this should take approximately 5 minutes. The mixture should look like a scramble.
  4. Serve and enjoy.
