Chicken Apple Brie Sandwich

Instructions

  1. Slice the cooked chicken breast into manageable sandwich pieces.
  2. Thinly slice a quarter of a Granny Smith apple.
  3. Slice your Brie into slices that are thin enough to cover the whole face of the sandwich.
  4. Preheat the oven to 350° while you spread the red pepper jelly on one slice of bread.
  5. Layer the sandwich with apple slices, chicken, and Brie.
  6. Place the sandwich, open faced, on a baking sheet. Place the top piece of bread next to it on the baking sheet, and bake for 5-10 minutes or until the Brie is runny.
  7. Remove the sandwich from the oven, and spread mayonnaise on the other slice of bread. Optionally shake some herb and garlic spice mix on the mayo side.
  8. Add lettuce, and close the sandwich!
