Cauliflower and Lentil Curry

  • In a skillet pan heat oil over medium heat. Saute the onion, garlic, and ginger for 3 minutes.
  • Add curry paste, turmeric, and curry powder and let cook for 1 minute.
  • Add vegetable broth and water to pan and bring to a boil. Add lentils and let simmer for 20-30 minutes.
  • Before lentils are finished cooking, add cauliflower and let simmer for 10 minutes or until crispy. Stir and serve with cilantro. Enjoy.
