Instructions

  • Place olive oil in a large non-stick pan over medium heat
  • Stir in minced garlic and cumin for 1 minute
  • Add black beans, tomatoes, corn, jalapeno, and quinoa. Add water after one minute of stirring then bring to a boil.
  • Cover pan, reduce heat and simmer for 20 minutes or until quinoa is cooked
  • Remove pan from heat and let sit for 5 minutes
  • Pour food into a bowl and top with diced avocado and lime wedges. Enjoy.
